Nobie’s has been one of my favorite restaurants for years so it was such a thrill for me to step into their kitchen. Even more of a thrill? Eating this. My god. Called ‘Freak in the Sheets’, this dish brings together buttery uni, tender Gulf crab, luxurious sheets of squid ink pasta, and smoky trout roe ?.
